03 - 2 tablespoons crumbled feta cheese

05 - 2 tablespoons sun-dried tomatoes, drained and diced
06 - 1 tablespoon Kalamata or black olives, thinly sliced

→ Bread & Butter

07 - 4 slices artisan whole grain bread
08 - 2 tablespoons creamy butter, softened

# Instructions:

01 - Place the chopped spinach in a microwave-safe bowl and heat for 45 seconds until leaves are nicely wilted. Mix in the mozzarella, crumbled feta, ricotta, diced sun-dried tomatoes, and sliced olives until everything is well combined into a creamy, flavorful mixture.
02 - Generously spread the Mediterranean cheese mixture across two bread slices, then place the remaining slices on top to create sandwiches. Butter the top surfaces of both sandwiches evenly.
03 - Warm a heavy-bottomed skillet over medium-low heat without adding any oil. Place sandwiches butter-side down in the pan, then spread the remaining butter on the exposed tops. Cook each side for about 2 minutes until the bread turns beautifully golden and the cheese melts completely. Flip carefully to avoid spilling the filling, then slice diagonally and serve while hot.
