01 - 1 pound ground beef
02 - 1 tablespoon olive oil
03 - 1 red bell pepper, deseeded and diced
04 - 1 pint cherry tomatoes, sliced in half
05 - 8 ounces baby spinach
06 - 4 garlic cloves, minced
07 - 2 green onions, thinly sliced, white and green parts separated

08 - ½ teaspoon dried oregano
09 - Kosher salt and freshly ground black pepper to taste
10 - 2 tablespoons crumbled feta (optional)

# Instructions:

01 - Heat the olive oil in a large pan over medium-high heat. Add the diced bell pepper and halved cherry tomatoes, then sauté for 4-5 minutes until the tomatoes start to blister and become saucy. Add the minced garlic and stir for another minute until fragrant.
02 - Add the baby spinach and the white parts of the sliced green onions to the pan. The spinach will look like a lot at first but will quickly cook down. Stir for 2-3 minutes until the spinach has completely wilted. Transfer all the cooked vegetables to a plate and set aside.
03 - In the same pan, add the ground beef, dried oregano, salt, and black pepper. Use a spatula to break the meat into smaller pieces as it cooks. Continue cooking until the beef is completely browned, then drain off any excess grease.
04 - Return the cooked vegetables to the pan with the beef. Add the green parts of the green onions and stir everything together until warmed through. Before serving, sprinkle with crumbled feta cheese if desired.
