Easy Mexican Beef Skillet (Print Version)

# Ingredients:

→ Base Ingredients

01 - 2 tablespoons of avocado oil for cooking
02 - 1 pound of fresh potatoes, diced into small half-inch pieces
03 - 1 pound of lean ground beef

→ Fresh Vegetables

04 - 1/2 cup of yellow onion, finely diced
05 - 1 red bell pepper, chopped into small pieces
06 - 4 ounces of diced green chiles
07 - 1/4 cup of fresh cilantro, roughly chopped

→ Seasonings & Toppings

08 - Kosher salt and freshly cracked black pepper to your liking
09 - 2 1/2 teaspoons of chili powder
10 - 1 teaspoon of ground cumin
11 - 1/2 teaspoon of smoky paprika
12 - 1/2 cup of your favorite shredded cheese

# Instructions:

01 - Warm up your avocado oil in a large skillet over medium-high heat. Once it's nice and hot, give it a swirl to coat the bottom, then turn the heat down to medium. Toss in those diced potatoes and let them cook while stirring frequently. You'll want to cook them for about 6 minutes until they're getting that beautiful golden color and starting to soften up - they'll still be a bit firm at this point, which is perfect.
02 - Push all those lovely golden potatoes to one side of your skillet. Now add the ground beef to the empty space and start breaking it up with your spoon. Add the diced onion and red bell pepper right in with the beef. Season everything generously with salt and pepper, and keep cooking while breaking up the meat into nice bite-sized pieces.
03 - Time to bring in the good stuff! Stir in those green chiles along with the chili powder, cumin, and smoky paprika. Don't forget the fresh cilantro! Mix everything together really well and let it all cook together for another 6-8 minutes. You'll know it's ready when the potatoes are perfectly tender and the beef is completely cooked through.
04 - Give everything a taste and add more salt if it needs it. Sprinkle that shredded cheese over the top and let it cook for just another minute until it gets all melty and delicious. If you've got extra cilantro on hand, throw some on top for a fresh finish, then serve it up while it's still hot and bubbly.

# Notes:

01 - This hearty one-skillet meal combines tender potatoes with seasoned ground beef and colorful vegetables for a complete dinner that's ready in just 35 minutes.
02 - The key to perfectly cooked potatoes is getting them golden before adding the other ingredients - this gives them the best texture and flavor.
03 - Feel free to customize the heat level by adjusting the amount of green chiles or adding a pinch of cayenne pepper if you like things spicy.
