Quick Asian beef dinner (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 pound ground beef
02 - 1 teaspoon sea salt
03 - ¼ teaspoon black pepper (skip for AIP)
04 - 4 green onions, chopped into 1-inch pieces

→ Sauce

05 - ⅓ cup coconut aminos
06 - ¼ cup broth (any kind works)
07 - 1 teaspoon apple cider vinegar
08 - 2 teaspoons coconut sugar (omit for Whole30)
09 - 1 tablespoon + 1 teaspoon arrowroot starch
10 - 1 thumb-sized piece fresh ginger, grated
11 - 3 cloves garlic, minced

# Instructions:

01 - In a large skillet over medium heat, brown the ground beef with sea salt and pepper. Once fully cooked, set aside but leave about 2 tablespoons of fat in the pan.
02 - In a separate bowl, combine coconut aminos, broth, apple cider vinegar, coconut sugar, and arrowroot starch. Whisk everything together until well mixed.
03 - Return to your pan on low-medium heat. Add the minced garlic and grated ginger to the reserved fat and cook for 2-3 minutes until fragrant.
04 - Pour your sauce mixture into the pan with the aromatics and stir continuously. Let it heat through and thicken for 1-2 minutes.
05 - Add the cooked ground beef back to the pan and mix well to coat with the sauce. Toss in the green onions and cook for another 2-3 minutes until they've softened slightly.
06 - Enjoy hot over cauliflower rice or with your favorite vegetables on the side.

# Notes:

01 - This Mongolian ground beef is a budget-friendly twist on the classic dish, using ground beef instead of steak.
02 - It's a healthier soy-free alternative that's compatible with paleo, Whole30, and AIP diets.
