Quick One-Pot Taco Pasta (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 pound lean ground beef
02 - 1 medium onion, diced (about 1 cup)
03 - 8 ounces (225g) pasta shells, macaroni, or rotini

→ Seasonings & Liquids

04 - 2 tablespoons taco seasoning
05 - 1 tablespoon olive oil
06 - 2 cups chicken broth
07 - 1 teaspoon salt, or to taste
08 - ½ teaspoon black pepper

→ Vegetables & Beans

09 - 1 (15-ounce) can black beans, drained and rinsed
10 - 1 (15-ounce) can diced tomatoes, with juice
11 - 1 cup corn, fresh or frozen

→ Toppings

12 - 1 cup (4 ounces) shredded cheddar cheese

# Instructions:

01 - Heat oil in a large pot over medium-high heat. Add onion and ground beef, cooking until beef is no longer pink. Drain extra fat.
02 - Stir in taco seasoning and cook for a few minutes until fragrant.
03 - Add pasta, tomatoes, beans, corn, and broth. Bring to a boil, then reduce heat and simmer 8-12 minutes, stirring occasionally.
04 - Stir in cheese until melted. Season with salt and pepper to taste.
