Baked Cauliflower Steaks (Print Version)

01 - 2 medium fresh cauliflower heads
02 - Olive oil cooking spray

03 - 1 teaspoon Diamond Crystal kosher salt (or ½ teaspoon regular salt)
04 - ½ teaspoon freshly ground black pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon sweet paprika
07 - 1 teaspoon ground coriander

# Instructions:

01 - Start by heating your oven to 425°F. Grab a large rimmed baking sheet and line it with either nonstick foil or parchment paper that can handle high heat. Give it a good spray with olive oil to prevent sticking.
02 - Give your cauliflower heads a thorough rinse and remove any outer leaves. Trim just the very bottom of the stem, but keep the core intact - this is what holds your steaks together! Cut each head into thick slices about ¾-inch wide. Don't worry when some pieces fall apart into florets - that's totally normal and expected.
03 - Place your cauliflower steaks in a single layer on your prepared baking sheet, then scatter those loose florets around them. Spray the tops generously with olive oil and sprinkle with half of your seasoning mixture.
04 - Pop the baking sheet into your preheated oven for 15 minutes. When the timer goes off, carefully remove the sheet and flip each piece using two wide spatulas - they'll be tender, so be gentle!
05 - Give the flipped cauliflower another spray of oil and sprinkle with your remaining seasonings. Return to the oven for another 10-15 minutes until they're beautifully browned and fork-tender. Serve these beauties right away while they're hot and crispy!

# Notes:

01 - Don't panic when some cauliflower slices fall apart during cutting - this is completely normal! Just roast those loose florets alongside your intact steaks.
02 - Keep that core intact! It might seem tempting to trim it away, but the stem is completely edible and helps hold your steaks together during cooking.
03 - Store any leftovers in the fridge for up to 4 days in an airtight container. Reheat gently in the microwave at half power or warm them up uncovered in a 350°F oven.
04 - These freeze beautifully for up to three months if you want to meal prep ahead of time.
