01 - Start by peeling and removing the pits from your peaches. For firm peaches, a vegetable peeler works great. If they're super ripe and soft, make a small cross cut at the bottom, drop them in boiling water for about 20-30 seconds, then transfer to ice water - the skin will slip right off! Once peeled and pitted, place the peach pieces in a freezer-safe container and freeze until they're completely firm, which usually takes around 2 to 4 hours.
02 - Toss your frozen peach pieces into a food processor along with the sugar, that pinch of salt, and fresh lemon juice. Blend everything together until it becomes smooth and creamy - this is where the magic happens and it transforms into sorbet!
03 - Transfer your beautifully blended mixture into a loaf pan or any freezer-safe container you have on hand. Pop it back in the freezer for at least 4 hours, though you can leave it for up to three days if you're planning ahead.
