Pumpkin Pie Overnight Oats (Print Version)

# Ingredients:

01 - 1/4 cup plain nonfat Greek yogurt (vanilla works great too!)
02 - 1/2 cup unsweetened vanilla almond milk (any milk of choice will do)
03 - 1/4 cup pure pumpkin puree
04 - 1-2 tablespoons pure maple syrup (adjust to taste)
05 - 1/2 teaspoon vanilla extract
06 - 1/2 cup old-fashioned rolled oats (use gluten-free if needed)
07 - 2 teaspoons chia seeds
08 - 1/2 teaspoon pumpkin pie spice blend

# Instructions:

01 - Grab a medium-sized bowl and whisk together your Greek yogurt, almond milk, pumpkin puree, vanilla extract, and 1 tablespoon of maple syrup until everything is smooth and well blended.
02 - Fold in the rolled oats, chia seeds, and pumpkin pie spice. Give it a taste and add more maple syrup if you'd like it sweeter. Transfer everything to a glass jar or airtight container and let it chill in the refrigerator for at least 4 hours, or better yet, overnight.

# Notes:

01 - Don't have pumpkin pie spice? No worries! Make your own by mixing 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1/8 teaspoon ginger, and just a tiny pinch of ground cloves or allspice.
02 - Want to make this completely plant-based? Simply swap the Greek yogurt for your favorite dairy-free yogurt alternative.
