Take the turkey legs out of the refrigerator about 15 minutes before cooking to bring them closer to room temperature. Heat your oven to 400°F and line a deep roasting pan with parchment paper for easy cleanup.

Use paper towels to thoroughly pat the drumsticks dry, removing any excess moisture from the surface. This step helps ensure crispy skin during roasting.

Combine all the dry seasonings in a small mixing bowl - salt, paprika, garlic powder, onion powder, thyme, dried rosemary, sage, oregano, black pepper, and cayenne if using. Mix well to create an aromatic spice blend.

Coat both sides of each drumstick generously with olive oil using a pastry brush or your hands. Then massage the spice mixture all over the turkey legs, making sure to cover every surface. Place them in your prepared roasting pan and scatter the fresh chopped rosemary on top.

Place the pan in the preheated oven and roast for 60-70 minutes. Start checking the internal temperature after an hour using a meat thermometer inserted into the thickest part of the meat. When it reads 165°F and the juices run clear, your turkey is done. If needed, continue cooking in 10-minute intervals until you reach the proper temperature.

Remove from the oven and let the turkey legs rest in the pan for about 10 minutes. This allows the juices to redistribute throughout the meat, ensuring moist and flavorful results.
