Easy Slow Cooker Chicken (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 pounds bone-in chicken thighs with skin (about 4 to 5 pieces)
02 - 1 tablespoon extra virgin olive oil
03 - 1/3 cup low-sodium chicken stock
04 - 1/4 cup unsalted butter, cut into small cubes
05 - 3 fresh garlic cloves, finely minced

→ Seasoning Blend

06 - 1 teaspoon granulated garlic powder
07 - 1 teaspoon sweet paprika
08 - 1/2 teaspoon onion powder
09 - 1/2 teaspoon fine sea salt
10 - 1/2 teaspoon dried Italian herb blend

→ For Serving

11 - Fresh flat-leaf parsley, chopped for garnish

# Instructions:

01 - Start by patting each chicken thigh completely dry using clean paper towels. In a small mixing bowl, combine the garlic powder, paprika, onion powder, salt, and Italian seasoning. Using clean hands, massage this aromatic spice blend thoroughly into every surface of the chicken thighs, ensuring they're evenly coated with flavor.
02 - Warm the olive oil in a large skillet over medium-high heat until it shimmers. Carefully place the seasoned chicken thighs skin-side down in the hot pan. Let them sear undisturbed for 4 to 5 minutes until the skin becomes beautifully golden and crispy. Transfer the chicken to your slow cooker, arranging them skin-side up to maintain that lovely crispy texture.
03 - Pour the chicken stock into the bottom of your slow cooker, then scatter the butter cubes and minced garlic around the chicken. Cover and cook on the low setting for 4.5 to 5 hours, until the meat is incredibly tender and easily pulls away from the bone. Before serving, check that the internal temperature reaches 165°F for food safety. Sprinkle with fresh parsley and serve immediately while hot.

# Notes:

01 - Store any leftover chicken in an airtight container in the refrigerator for up to 3 days
02 - Calorie count is estimated per serving and may vary based on specific ingredients used
03 - For best results, choose chicken thighs that are similar in size for even cooking
