Easy Slow Cooker Chili (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 pounds lean ground beef (90/10 or 93/7 blend)
02 - 1 large yellow onion, finely chopped
03 - 3 fresh garlic cloves, minced

→ Spices & Seasonings

04 - 2 teaspoons ground cumin
05 - 2 tablespoons chili powder
06 - 1 teaspoon garlic powder
07 - 1 teaspoon dried oregano
08 - 1½ teaspoons salt (adjust to taste)
09 - ½ teaspoon freshly ground black pepper

→ Beans & Tomatoes

10 - 1 can (15 oz) black beans, drained and rinsed
11 - 2 cans (15 oz each) kidney beans, drained and rinsed
12 - 2 cans (15 oz each) diced tomatoes with juice
13 - 1 can (10 oz) diced tomatoes with green chiles, with juice
14 - 2 cans (15 oz each) tomato sauce

# Instructions:

01 - Heat a large skillet over medium-high heat and add the ground beef. Cook for 4-5 minutes, breaking it apart with a spatula as it browns and releases its natural juices.
02 - Toss in the diced onion and cook until it becomes tender and translucent, about 4-5 minutes. Add the minced garlic along with all the spices - cumin, chili powder, garlic powder, oregano, salt, and pepper. Stir everything together and let it cook for another 30 seconds until fragrant.
03 - Move the seasoned beef mixture to your 6-quart slow cooker. Add all the remaining ingredients - the rinsed beans, diced tomatoes with their juices, tomatoes with green chiles, and tomato sauce. Give everything a good stir to combine.
04 - Cover and cook on high heat for 3-4 hours, or switch to low heat for 6-8 hours if you prefer a longer, gentler cooking process. Taste and adjust seasoning if needed before serving hot.

# Notes:

01 - This hearty chili develops incredible depth of flavor as it simmers slowly, making the beef incredibly tender and juicy.
02 - Perfect for meal prep - the flavors actually improve after a day or two in the refrigerator.
03 - Great for feeding a crowd or freezing portions for later meals.
