Easy Slow Cooker Beef (Print Version)

# Ingredients:

→ Meat & Seasonings

01 - 3 pounds sirloin steak, cut into juicy bite-sized chunks
02 - 2 teaspoons kosher salt
03 - 1 teaspoon freshly ground black pepper
04 - 2 tablespoons olive oil

→ Aromatics & Sauce

05 - 1 small sweet onion, thinly sliced
06 - 3 cloves garlic, thinly sliced
07 - 1 cup unsalted beef stock or broth
08 - 1 packet (1 ounce) au jus gravy mix
09 - 4 tablespoons unsalted butter, cut into thin slices
10 - Fresh chopped parsley for garnish (optional)

# Instructions:

01 - Grab all your steak pieces and toss them in a large bowl with the salt and pepper until they're evenly coated.
02 - Heat up half the oil in a large skillet over medium-high heat. Working in batches (don't crowd the pan!), brown the steak pieces and transfer them to your 6-quart slow cooker. Add more oil between batches if needed.
03 - Once all the steak is in the slow cooker, add the sliced onion and garlic, then give everything a good toss together.
04 - Pour the beef stock over everything. Sprinkle the au jus mix evenly across the top, then dot with the butter slices.
05 - Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours. If you're around, give it a gentle stir every 30 minutes or so.
06 - Sprinkle with fresh parsley if you like, then serve those tender steak bites over creamy mashed potatoes or egg noodles to soak up all that amazing gravy!

# Notes:

01 - These steak bites are fall-apart tender and perfect for busy weeknights - just dump everything in your slow cooker and let it work its magic!
02 - The secret to maximum flavor is searing the meat first, but you can skip this step if you're short on time.
03 - This comfort food recipe makes the most delicious gravy that's perfect over mashed potatoes or egg noodles.
