Slow Cooker Swamp Potatoes (Print Version)

# Ingredients:

→ Main Components

01 - 3 pounds of small baby potatoes, cut in half (or you can use 7-8 cups of peeled and diced red or russet potatoes)
02 - 1 pound of smoky sausage, sliced into rounds (about 4-5 links)
03 - 1 pound of fresh green beans, trimmed and cut into 3-inch pieces (frozen or canned work too - just drain canned ones first)

→ Seasonings & Liquids

04 - 1 packet of ranch seasoning mix (or 2-3 tablespoons of homemade ranch blend)
05 - 3 teaspoons of Cajun seasoning (store-bought or make your own)
06 - 1 cup of rich beef broth
07 - 6 tablespoons of butter, cut into individual pats

# Instructions:

01 - Toss the halved potatoes, sliced sausage, and green bean pieces into your 6-quart slow cooker. Everything should fit comfortably with room to stir.
02 - Sprinkle the ranch seasoning and Cajun spices evenly over all the ingredients. Don't worry about being too precise - just make sure everything gets coated.
03 - Pour the beef broth over everything, then give it all a good stir to make sure the seasonings coat the potatoes, sausage, and beans nicely.
04 - Place the 6 butter pieces evenly across the top of the mixture. They'll melt down and create a rich, flavorful base as it cooks.
05 - Cover and cook on LOW for 6-8 hours, or if you're in a hurry, HIGH for 3-4 hours. The potatoes should be fork-tender when done.
06 - Give everything a gentle stir and serve immediately while it's hot and steamy. Perfect on its own or with some crusty bread!

# Notes:

01 - This recipe has a mild spice level that even picky eaters can handle, but feel free to add more Cajun seasoning or hot sauce if you like heat.
02 - Fresh green beans work best, but frozen (no thawing needed) or canned (drained) are perfectly fine substitutes.
03 - Using pre-cooked smoked sausage is key - if you use raw sausage, cook it in a skillet first to avoid greasy pools in your slow cooker.
04 - Low and slow cooking (6-8 hours) gives better results than high heat cooking for more tender potatoes and deeper flavors.
05 - Leftovers keep in the fridge for 3-4 days and reheat beautifully in the microwave.
