Creamy Slow Cooker Soup (Print Version)

# Ingredients:

→ Meat & Proteins

01 - 6 strips of bacon
02 - 1 pound mild pork sausage (breakfast or Italian style works great)

→ Vegetables & Aromatics

03 - 4 cups russet potatoes, diced into bite-sized pieces
04 - 1 cup white onion, finely diced
05 - 2 teaspoons fresh minced garlic
06 - 4 cups fresh kale, roughly chopped and stems removed

→ Seasonings & Spices

07 - 1/4 teaspoon kosher salt
08 - 1/4 teaspoon freshly ground black pepper
09 - 1 teaspoon dried basil leaves
10 - 1/2 teaspoon dried thyme

→ Liquids & Dairy

11 - 32 ounces good-quality chicken broth
12 - 1 1/2 cups heavy whipping cream

# Instructions:

01 - Heat a large skillet over medium-high heat and cook the bacon until it's beautifully crispy. Remove and transfer to your slow cooker. Using the same pan with all those delicious bacon drippings, brown and crumble the pork sausage until fully cooked, then add it to the slow cooker with the bacon.
02 - Toss the diced potatoes, onion, salt, pepper, basil, thyme, garlic, and chicken broth into your slow cooker with the cooked meats. Give everything a gentle stir to combine well.
03 - Cover your slow cooker and let it work its magic on LOW for 7 hours, or if you're in a hurry, cook on HIGH for 4 hours. The potatoes should be tender and the flavors beautifully melded together.
04 - Once your cooking time is up, pour in the heavy cream and add all that lovely chopped kale. Gently push the kale down into the soup so it's mostly submerged. Cover again and cook for another 20 minutes to wilt the kale and heat the cream through.
05 - Ladle into warm bowls and serve immediately while it's hot and creamy. This soup is absolutely perfect with some crusty bread on the side!

01 - This soup keeps well in the refrigerator for up to three days when stored in an airtight container.
02 - Avoid freezing leftovers as both potatoes and cream don't freeze and reheat well, often becoming grainy or separated.
03 - You can substitute the mild pork sausage with spicy Italian sausage if you prefer more heat in your soup.
