Easy one-pan beef noodles (Print Version)

# Ingredients:

→ Main ingredients

01 - 1 tbsp sunflower oil
02 - 400g steak, fat removed and cut into thin strips
03 - 300g broccoli (or a whole head)
04 - 160g mange tout
05 - 250g dried egg noodles

→ For the sauce

06 - 1 tbsp fresh ginger, crushed or finely chopped
07 - 4 cloves garlic, peeled and crushed
08 - 5 tbsp oyster sauce
09 - 6 tbsp reduced sodium dark soy sauce
10 - 6 tbsp honey
11 - 6 tbsp tomato ketchup

→ To serve

12 - 4 spring onions, trimmed and thinly sliced
13 - Sesame seeds (optional)

# Instructions:

01 - Mix all the sauce ingredients in a small bowl - ginger, garlic, oyster sauce, soy sauce, honey and ketchup. Set aside while you prepare the other ingredients.
02 - Place your egg noodles in a large bowl and pour boiling water over them. Cover with a plate and let them soak while you cook the stir fry. Remember to stir them occasionally to make sure they soften evenly.
03 - Heat the sunflower oil in a large frying pan or wok until it's nice and hot. Add the beef strips and stir-fry over high heat for about 4-5 minutes until browned.
04 - Toss in the broccoli and mange tout, continuing to stir-fry for another 4-5 minutes until the vegetables have softened slightly but still retain some crunch.
05 - Drain your softened noodles and add them to the pan. Pour in the prepared sauce and toss everything together, making sure all ingredients are well coated in the sticky, flavorful sauce.
06 - Divide between plates and sprinkle with the sliced spring onions and a few sesame seeds if desired. Enjoy while hot!

# Notes:

01 - When cutting the steak into strips, cut AGAINST the grain (across the muscle fibers) to ensure tender rather than chewy meat.
02 - You can use any kind of frying steak - flank, sirloin and rump all work well.
03 - Feel free to substitute other vegetables you have on hand, though green vegetables pair particularly well with beef.
04 - If you're sensitive to saltiness, make sure to use reduced sodium soy sauce or decrease the amount.
