Mix all the sauce ingredients in a small bowl - ginger, garlic, oyster sauce, soy sauce, honey and ketchup. Set aside while you prepare the other ingredients.

Place your egg noodles in a large bowl and pour boiling water over them. Cover with a plate and let them soak while you cook the stir fry. Remember to stir them occasionally to make sure they soften evenly.

Heat the sunflower oil in a large frying pan or wok until it's nice and hot. Add the beef strips and stir-fry over high heat for about 4-5 minutes until browned.

Toss in the broccoli and mange tout, continuing to stir-fry for another 4-5 minutes until the vegetables have softened slightly but still retain some crunch.

Drain your softened noodles and add them to the pan. Pour in the prepared sauce and toss everything together, making sure all ingredients are well coated in the sticky, flavorful sauce.

Divide between plates and sprinkle with the sliced spring onions and a few sesame seeds if desired. Enjoy while hot!
