Sweet strawberry quick bread (Print Version)

# Ingredients:

→ For the Bread

01 - ¾ cup granulated sugar (150g)
02 - ½ cup whole milk (120mL)
03 - ½ cup vegetable oil (120 mL)
04 - 1 large egg
05 - 1 ½ teaspoons vanilla extract
06 - 2 cups plus 2 tablespoons all-purpose flour (255g)
07 - 2 teaspoons baking powder
08 - ½ teaspoon salt
09 - 1 ½ cups diced fresh strawberries (230g)

→ For the Glaze

10 - 3 tablespoons diced fresh strawberries
11 - 1 cup powdered sugar (120g)
12 - 1 teaspoon whole milk

# Instructions:

01 - Heat your oven to 350°F and give a 9x5-inch loaf pan a light coat of baking spray.
02 - In a bowl, whisk together the sugar, milk, oil, egg, and vanilla until they're well combined.
03 - In another bowl, stir 2 cups of flour, baking powder, and salt together until evenly mixed.
04 - Gently add the flour mixture to your wet ingredients and stir just until combined - don't overmix or your bread will get tough!
05 - Toss your diced strawberries with 2 tablespoons of flour in a small bowl - this prevents them from sinking to the bottom of your bread.
06 - Fold the flour-coated strawberries into your batter and pour everything into your prepared loaf pan.
07 - Bake for 55-60 minutes until a wooden pick comes out clean when inserted in the center. Try not to open the oven door while baking!
08 - Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
09 - Mash the strawberries in a small bowl, then stir in powdered sugar and milk until smooth. You might need more sugar if your berries are very juicy.
10 - Spoon the glaze over your cooled bread and let it set for about 30 minutes before slicing and enjoying!
