Dragon Fruit Summer Salad (Print Version)

# Ingredients:

→ Fresh Fruits

01 - 2 dragon fruits, halved lengthwise
02 - 1 whole pineapple, peeled and cored
03 - 11 oz fresh blueberries
04 - 1 pint fresh strawberries
05 - 2 kiwi fruits, peeled

→ Dressing & Garnish

06 - 1-2 tablespoons fresh mint leaves
07 - 1/4 cup pure honey
08 - 3 tablespoons freshly squeezed lime juice
09 - 1 teaspoon fresh lime zest

# Instructions:

01 - Start by cutting the dragon fruit flesh into bite-sized cubes or fun rounds using a melon baller. Dice the pineapple and kiwi into similar-sized pieces. Remove the green tops from strawberries and slice them in half or quarters depending on how big they are. Finely chop the fresh mint leaves and set everything aside.
02 - In a small mixing bowl, whisk together the honey, freshly squeezed lime juice, and lime zest until everything is well combined and smooth.
03 - Add all the prepared fruits to a large serving bowl. Sprinkle the chopped mint over the top, then drizzle the honey lime dressing evenly over everything. Gently toss the salad to coat all the fruit with the dressing and mint.
04 - Cover the bowl and refrigerate for a bit to let all the flavors meld together beautifully. Give it another gentle toss before serving and add a few extra mint leaves as garnish if you like. Serve chilled and enjoy this refreshing summer treat!

# Notes:

01 - Don't let the dragon fruit's unusual appearance scare you off - it's actually super easy to work with! Just slice it in half lengthwise and scoop out the soft flesh like you would with an avocado.
02 - For the prettiest presentation, try cutting all your fruits to similar sizes using a melon baller or fun-shaped mini cookie cutters.
03 - This salad is best enjoyed fresh, so try not to make it more than a day ahead. The dragon fruit tends to lose its firm texture and fresh taste if it sits too long.
