Thai Chicken Lettuce Wraps (Print Version)

# Ingredients:

→ Sauce

01 - 3 Tbsp low-sodium soy sauce
02 - 2 Tbsp fish sauce
03 - 2 1/2 Tbsp brown sugar
04 - 2 Tbsp lime juice
05 - 1 tsp sesame oil
06 - 2 tsp cornstarch

→ Filling

07 - 5 green onions, sliced, light parts and green parts kept separate
08 - 1 Tbsp minced garlic
09 - 1 Tbsp minced ginger
10 - 1 1/2 lbs 92% lean ground chicken or turkey
11 - 1 Tbsp olive oil or vegetable oil
12 - 1 red bell pepper, cored and diced
13 - 1 1/2 cups matchstick carrots, roughly chopped
14 - 1/3 cup chopped cilantro
15 - 1/4 cup chopped unsalted dry roasted peanuts

→ For Serving

16 - Lettuce leaves (Romaine hearts, artisan Romaine, iceberg or butter lettuce)
17 - Hot sauce and/or peanut sauce (optional)

# Instructions:

01 - In a small bowl, mix together the soy sauce, fish sauce, brown sugar, lime juice, sesame oil and cornstarch until well combined. Set aside for later.
02 - Heat oil in a large non-stick skillet over medium-high heat. Add the white parts of the green onions, garlic and ginger. Sauté for about 30 seconds until fragrant.
03 - Add ground chicken or turkey to the skillet. Cook while breaking up the meat with a spatula until it's nearly cooked through. No need to drain any liquid.
04 - Toss in the diced red bell pepper and cook for about 2 minutes until slightly softened. Add the chopped carrots next.
05 - Give your sauce mixture a quick whisk and pour it into the skillet. Stir everything together and cook for about 1 minute until the sauce thickens and the meat is fully cooked. Taste and add a pinch of salt if needed.
06 - Mix in the chopped cilantro, green parts of the onions, and peanuts. Remove from heat.
07 - Scoop the warm filling onto whole lettuce leaves. Serve with additional hot sauce, peanuts, and peanut sauce if desired.
