Turkey Zucchini Boats (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 medium fresh zucchini
02 - 1/2 yellow onion, diced
03 - 1 pound lean ground turkey
04 - 1 1/2 cups quality marinara sauce
05 - 2-3 tablespoons freshly grated Parmesan cheese (optional)

# Instructions:

01 - Heat your oven to 400°F and get ready to create something delicious.
02 - Heat a large non-stick pan over medium-high heat. Toss in the diced onion and ground turkey, seasoning generously with salt and pepper. Cook for about 8-10 minutes, using a wooden spoon to break up the meat as it browns beautifully.
03 - Pour in the marinara sauce and stir everything together until the turkey is completely coated. Let it simmer for another 2-3 minutes to meld those flavors.
04 - While your turkey mixture is cooking, slice each zucchini lengthwise down the middle. Using a spoon, carefully scoop out the seeds and flesh from the center, leaving about 1/4 inch of zucchini wall to create perfect boats.
05 - Arrange your zucchini boats cut-side up in a 9x13 inch baking dish. Generously spoon the turkey mixture into each boat, then sprinkle with Parmesan cheese if you're using it.
06 - Cover the dish with aluminum foil and bake for 20-30 minutes, until the zucchini is tender and heated through, and any cheese has melted into golden perfection. Serve immediately while hot.

# Notes:

01 - For extra protein variety, try swapping the ground turkey with ground chicken, beef, or even Italian sausage for different flavor profiles.
02 - Feel free to experiment with different pasta sauces - pesto makes an incredible alternative for a fresh twist.
03 - Add extra vegetables like bell peppers or mushrooms to the turkey mixture when cooking the onions for added nutrition and flavor.
04 - These boats can be prepped ahead of time and stored in the refrigerator until you're ready to bake them.
