Turkey Zucchini Skillet (Print Version)

# Ingredients:

→ Main Protein

01 - 1 pound lean ground turkey (ground beef works too if you prefer)
02 - 1 teaspoon salt
03 - ½ teaspoon freshly ground black pepper
04 - ½ teaspoon chili powder
05 - ½ teaspoon dried oregano
06 - ¼ teaspoon sweet paprika
07 - 1 teaspoon fresh garlic, finely minced

→ Fresh Vegetables

08 - 1½ tablespoons olive oil or avocado oil
09 - 2 medium zucchini, diced into bite-sized cubes
10 - 1 bell pepper (any color you like), chopped into ¾-inch pieces
11 - ½ white or yellow onion, cut into ¾-inch chunks
12 - ½ teaspoon salt
13 - ½ teaspoon garlic powder
14 - ½ teaspoon onion powder
15 - ½ teaspoon dried oregano
16 - ½ teaspoon dried basil
17 - ½ teaspoon paprika
18 - ¼ teaspoon black pepper
19 - ½ cup water
20 - 2 tablespoons tomato paste
21 - 5 ounces fresh baby spinach leaves

# Instructions:

01 - Heat a large skillet over medium-high heat and add your ground turkey. Use a wooden spatula to break it up into small crumbles as it cooks. Keep stirring occasionally until the meat is nicely browned all over.
02 - Sprinkle in the salt, pepper, chili powder, oregano, paprika, and minced garlic. Give everything a good stir and let it cook for another minute until the garlic becomes fragrant and golden. Transfer the seasoned turkey to a plate and set it aside for now.
03 - Lower the heat to medium and pour the oil into the same skillet. Add your diced zucchini, bell pepper chunks, and onion pieces. Season with salt, garlic powder, onion powder, oregano, basil, paprika, and pepper. Stir everything together and cook for 5-10 minutes, stirring occasionally, until the onions look translucent and the peppers and zucchini start to soften.
04 - Add the cooked turkey back to the skillet along with the water, tomato paste, and fresh spinach. Give it a good stir to combine everything, then cover the pan and let it simmer for 5-10 minutes until heated through and the spinach has wilted down completely.

02 - Try to cut all your vegetables to roughly the same size so they cook evenly together.
