Vegan Purple Yam Treats (Print Version)

# Ingredients:

01 - 6½ cups crispy puffed rice cereal (about 173 grams)
02 - 8 tablespoons plant-based butter (1 full stick)
03 - 15 ounces dairy-free vanilla mini marshmallows
04 - ½ cup purple yam jam (ube halaya)
05 - ½ teaspoon ube extract for extra flavor
06 - ¼ teaspoon fine sea salt

# Instructions:

01 - Grab an 8x8-inch square baking pan and line it with parchment paper so nothing sticks. You could also use a loaf pan if that's what you have (around 8.5x4.5 inches works great). Measure out your puffed rice cereal into a big mixing bowl and keep it nearby.
02 - Put your plant-based butter in a large pot and turn the heat to medium-low. Give it a stir now and then as it melts down completely into a smooth liquid.
03 - Toss in all the mini marshmallows and keep stirring with a wooden spoon. This takes around 10 minutes, but you'll end up with a wonderfully smooth and sticky mixture.
04 - Now for the fun part! Stir in your ube halaya, the ube extract, and that pinch of salt. Whisk everything together until it's mostly combined. Don't worry if it's not perfectly smooth - that's totally normal and adds character.
05 - Pour that gorgeous purple marshmallow mixture right over your cereal and mix like crazy until everything's coated. Speed is key here because once it cools down, the marshmallow firms up fast and gets harder to work with. A helpful trick is using two spoons and tossing everything together like you're making a salad.
06 - Quickly dump the whole mixture into your prepared pan and press it down firmly with the back of a spoon. If things get too sticky to handle, just lay another piece of parchment paper on top and press through that instead.
07 - Pop the pan in the fridge and let everything chill out for at least an hour until completely firm. Once they're set, cut them into squares and dig in!

01 - These treats stay fresh in the fridge for up to 5 days when stored properly.
02 - If your treats get too firm after refrigerating, just warm them in the microwave for 10-15 seconds to soften them back up.
03 - While regular-sized marshmallows can work, mini marshmallows melt much more evenly and create a better texture.
04 - Plain marshmallows without vanilla flavor work just fine if that's what you have on hand.
