Fresh Summer Fruit Salad (Print Version)

# Ingredients:

→ For The Salad

01 - 3 cups chilled strawberries, tops removed
02 - 3 cups chilled seedless watermelon, cut into cubes
03 - 2 tablespoons fresh mint, finely chopped or chiffonade
04 - ½ teaspoon chia seeds
05 - ½ cup crumbled feta cheese

→ For The Dressing

06 - 2 tablespoons olive oil
07 - Juice of 1 whole fresh lime
08 - 1 ½ teaspoons honey (or maple syrup as substitute)
09 - Crushed sea salt flakes to taste
10 - Freshly ground black pepper to taste

# Instructions:

01 - Combine olive oil, fresh lime juice, honey, and a pinch of salt and pepper in a mason jar or small bowl. Shake or whisk well until everything is mixed together, then set aside.
02 - Slice the trimmed strawberries into 3-4 pieces each. Cut the watermelon into bite-sized cubes about 1 to 1½ inches in size.
03 - Arrange the watermelon and strawberries on a serving platter. Gently fold in the chopped mint, chia seeds, and crumbled feta cheese.
04 - Drizzle the honey-lime dressing over the salad. Add a squeeze of fresh lime juice and sprinkle with sea salt flakes and a crack of pepper to taste. Serve immediately while cold and fresh!
