Whipped Feta Crostinis (Print Version)

# Ingredients:

01 - 24 crispy toasted baguette rounds (or substitute with bagel chips or your favorite crackers)
02 - 4 ounces crumbled feta cheese
03 - 1/4 cup softened cream cheese
04 - 1/4 cup rich cottage cheese (full-fat or whole milk variety)
05 - 1/2 cup roughly chopped pecans
06 - 3-4 fresh rosemary sprigs
07 - Freshly cracked black pepper for finishing

08 - 1/4 cup pure honey
09 - 1/2 tablespoon apple cider vinegar
10 - 1/2 tablespoon sriracha or your preferred hot sauce
11 - 1 garlic clove, finely minced (about 1 to 1 1/2 teaspoons)
12 - 1 teaspoon crushed red pepper flakes

# Instructions:

01 - Combine all honey ingredients in a microwave-safe bowl. Heat in 15-20 second intervals until the mixture becomes syrupy and pourable, stirring thoroughly between each heating session. Set aside to cool slightly while you prepare the feta mixture.
02 - Add the feta crumbles, cream cheese, and cottage cheese to your food processor. Pulse a few times to break everything down, then process continuously until you achieve a smooth, velvety texture. Stop occasionally to scrape down the sides with a spatula.
03 - Generously spread the whipped feta mixture onto each toasted bread slice using a spoon. Don't smooth it completely - leave some texture and peaks so the honey has places to pool. Arrange them on your serving platter in a single layer.
04 - Scatter the chopped pecans over each crostini and tuck a small rosemary sprig into each one. Drizzle the warm spicy honey generously over the top and finish with a few cracks of black pepper.
05 - Present immediately with any leftover honey on the side so guests can add more if they'd like. These are best enjoyed fresh while the bread is still crispy.

# Notes:

01 - For a bigger batch of spicy honey, simply scale up the ingredients and warm them gently in a small saucepan over low heat instead of the microwave. Let it cool for at least 15 minutes before using.
02 - Save time by preparing both the whipped feta and honey mixture a day ahead. Store the feta blend covered in the fridge and keep the honey at room temperature, then just assemble when ready to serve.
