# Ingredients:

# Instructions:

01 - Heat a tablespoon of oil in a medium saucepan over medium heat. Add your sliced onions and mushrooms, cooking them for 6-8 minutes until they develop a beautiful golden-brown color and start to caramelize.
02 - Stir in the minced garlic and dried thyme, cooking for just one minute while stirring constantly until wonderfully fragrant.
03 - In a small bowl, whisk your cornstarch with a splash of the vegetable broth until smooth, then combine this slurry with the remaining broth.
04 - Pour the broth mixture and plant milk into your pan, then add the drained beans. Let everything simmer gently for about 5 minutes until the stew thickens slightly and heats through completely.
05 - Fold in your baby greens and cook just until wilted, about 1 minute. Remove from heat and stir in the tamari and fresh lemon juice. Season generously with salt and pepper to taste, then garnish with fresh basil.
