# Ingredients:

14 - Red gel food coloring
15 - 1 teaspoon pure vanilla extract

# Instructions:

01 - Heat your oven to 350°F and prep two baking sheets with parchment paper or silicone mats. This keeps things neat and easy.
02 - In your stand mixer, whip the butter with both sugars until it's light and fluffy. Add the eggs one at a time, then mix in the vanilla until everything's well combined.
03 - In a separate bowl, whisk together the flour, cocoa powder, cornstarch, salt, and baking soda. Gradually fold this into your wet mixture until just combined - don't overmix!
04 - Use a medium cookie scoop to portion out the dough into balls. Place them on your prepared sheets, gently flatten each one, then bake for 15-18 minutes until the edges feel firm. Let them cool completely before decorating.
05 - Beat the egg whites, cream of tartar, powdered sugar, and vanilla in your stand mixer for 5-7 minutes until soft peaks form. If it looks runny or cream-colored, add another ½ cup powdered sugar and beat more.
