Sweet Potato Apple Bake (Print Version)

# Ingredients:

01 - 2 medium apples, thinly sliced (honeycrisp work beautifully)
02 - 2 medium sweet potatoes, peeled and cut into thin slices
03 - 2 tablespoons olive oil
04 - ¼ cup water
05 - 2 teaspoons ground cinnamon
06 - ½ cup pecans, roughly chopped
07 - 2 tablespoons pure maple syrup, plus more for drizzling

# Instructions:

01 - Get your oven warming up to 375°F so it's ready to go.
02 - Grab a 9x13 inch baking dish and toss in your sliced sweet potatoes and apples. Drizzle over the olive oil and water, then sprinkle with cinnamon. Give everything a good mix so each slice gets nicely coated with the seasoning.
03 - Cover your dish tightly with aluminum foil and slide it into the oven. Let it bake for 40 minutes until the potatoes and apples start getting tender.
04 - Take off the foil and stir in the chopped pecans and maple syrup. Pop it back in the oven uncovered for another 10 to 15 minutes until everything is perfectly soft and slightly caramelized.
