01 - 1 cup pitted dates (or raisins for a different twist)
02 - 3 tablespoons rich cocoa powder (cacao powder works beautifully too)
03 - 3 tablespoons desiccated coconut flakes
04 - 5 Weetbix or Weetabix cereal biscuits
05 - 3 tablespoons pure honey
06 - ½ cup crunchy sunflower seeds
07 - 1 teaspoon melted coconut oil (optional for extra richness)
08 - 1-2 tablespoons water (add only if mixture needs binding)
09 - Extra desiccated coconut for rolling and coating

# Instructions:

01 - Add your dates, cocoa powder, coconut flakes, melted coconut oil, Weetbix, sunflower seeds, and honey into your food processor or mini chopper. Give everything a good whiz until the ingredients start clumping together and forming a cohesive mixture.
02 - Take a look at your mixture - it should hold together when pressed. If it seems too dry or crumbly, add just a tablespoon of water and pulse again. Be patient here and add water gradually so you don't end up with a soggy mess.
03 - Scoop out the mixture and divide it evenly between your hands. Roll each portion into neat little balls - you should get about 12-14 depending on size. Don't worry if they're not perfectly round, homemade charm is part of the appeal!
04 - If you want that extra coconut goodness, roll each ball in the remaining desiccated coconut until nicely coated. Pop them into an airtight container and let them chill in the fridge to firm up. They'll be ready to enjoy once they've set!

01 - If you're using dried dates that seem a bit tough, soak them in warm water for about 15 minutes before blending - this makes them much easier to work with.
