Easy Cranberry Brie Bites (Print Version)

# Ingredients:

01 - 1 puff pastry sheet, defrosted
02 - 8 ounces brie cheese, diced into bite-sized cubes
03 - ½ cup whole berry cranberry sauce
04 - ¼ cup pecans, finely chopped
05 - Fresh rosemary or thyme sprigs for garnish

# Instructions:

01 - Heat your oven to 400°F and lightly grease a mini muffin pan to prevent sticking.
02 - On a floured work surface, roll out the defrosted puff pastry and slice it into 24 even squares, about 3 inches each. Gently press each square into the mini muffin cups to form little pastry shells.
03 - Place one cube of brie into each pastry shell. Add about a teaspoon of cranberry sauce on top of the cheese, then sprinkle with chopped pecans.
04 - Transfer the muffin pan to the oven and bake for 18 to 20 minutes, or until the pastry turns golden brown and crispy, and the cheese becomes melted and bubbly.
05 - Remove from the oven and top each warm bite with a small sprig of fresh rosemary or thyme. Serve immediately while still warm and gooey.

# Notes:

01 - For best results, choose brie that has a complete rind encasing it. When you cut the brie into cubes, the rind on the top and bottom helps hold the cheese together during baking, preventing it from melting all over the pan.
02 - Leftovers can be kept in an airtight container in the refrigerator for up to 4 days. Enjoy them cold straight from the fridge, or warm them up in the oven, toaster oven, or air fryer for a few minutes to bring back that fresh-baked texture.
03 - These bites are best enjoyed fresh and don't freeze well due to the delicate puff pastry texture.
