Heat a large skillet over medium-high heat. Add the ground beef and diced onion, cooking until the meat is nicely browned and almost fully cooked. Break up any large chunks as it cooks.

Toss in the minced garlic, green chiles, and taco seasoning. Keep cooking while stirring everything together until the beef is completely done and all the flavors have melded. Take it off the heat and set aside.

Get your oven going at 350°F. Cover a baking sheet with foil and lightly coat it with olive oil. Lay out a few tortillas in one layer, brush their tops with oil, and warm them in the oven for 3-4 minutes to make them pliable. Work in batches until all tortillas are ready.

Take each warmed tortilla and spoon about 2 tablespoons of the beef mixture onto the bottom third. Sprinkle some shredded cheese over the filling, then roll it up tightly. Place each rolled taquito seam-side down on your prepared baking sheet. Repeat until you've used all the tortillas and filling.

Bake the taquitos for 15 minutes, then carefully flip each one over and bake for another 10 minutes until they're golden and crispy all around.

Plate up your hot taquitos with fresh cilantro, sour cream, salsa, or whatever dipping sauces you love!
