Easy Blackberry Cobbler (Print Version)

# Ingredients:

→ Cobbler Base

01 - 1¼ cups granulated sugar, divided (reserve ¼ cup plus 2 tablespoons for topping)
02 - 1 cup self-rising flour
03 - 1 cup whole milk (or your preferred milk)
04 - 4 tablespoons unsalted butter, melted

→ Fruit & Serving

05 - 2 cups fresh blackberries, gently rinsed and dried
06 - Vanilla ice cream for serving alongside

# Instructions:

01 - Heat your oven to 350°F and generously grease a 9x9 inch baking dish. This prevents sticking and makes serving so much easier.
02 - In a large mixing bowl, whisk together 1 cup of sugar with the self-rising flour. Gradually pour in the milk, stirring until smooth, then blend in the melted butter until everything comes together beautifully.
03 - Pour this lovely batter directly into your prepared baking dish, spreading it evenly across the bottom. Don't worry about perfection - it'll even out as it bakes.
04 - Scatter those gorgeous blackberries evenly over the batter. They'll naturally sink down as the cobbler bakes, creating perfect pockets of fruit throughout.
05 - Sprinkle ¼ cup of the remaining sugar over the berries, but save those final 2 tablespoons for later - trust me on this!
06 - Slide into your preheated oven and bake for 50 minutes. The magic is happening - your kitchen will smell incredible!
07 - Remove from oven and sprinkle those reserved 2 tablespoons of sugar on top. Return to oven for another 10 minutes until the surface turns that perfect golden brown color.
08 - Let it cool for just a few minutes, then serve warm with a generous scoop of vanilla ice cream. This is comfort food at its finest!

# Notes:

01 - If using frozen blackberries, add them straight from the freezer - don't let them thaw or they'll become mushy and affect the texture.
02 - No self-rising flour? Make your own by combining 1 cup all-purpose flour with ½ teaspoon salt and 1½ teaspoons baking powder.
03 - Feel free to swap blackberries for blueberries, raspberries, strawberries, peaches, or create your own mixed berry combination.
04 - For extra berry goodness, reserve some berries and add them 30 minutes into baking so they sit closer to the surface.
