Mix 1/4 cup honey and 2 Tbsp soy sauce in a measuring cup until well combined. Set aside while you prepare the salmon.

Sprinkle both sides of your salmon fillets with sea salt and fresh ground pepper. Pour the flour onto a shallow plate and gently coat both sides of each salmon piece, making sure to shake off any excess.

Heat your large non-stick pan over medium heat and add the olive oil. While the pan is heating, brush one side of the salmon generously with half of your honey glaze.

Once the oil is hot, place the salmon in the pan with the glazed side down. While it's cooking, brush the top side with the remaining glaze. Cook for about 3 minutes on the first side until caramelized, then carefully flip and cook another 3 minutes until the salmon is just cooked through and flakes easily.

Squeeze fresh lime juice over the top of your caramelized salmon and garnish with chopped chives if desired. Serve immediately while hot.
