# Ingredients:

01 - 6 tablespoons butter
02 - 3 large eggs
03 - 3 tablespoons sugar
04 - 1 to 2 teaspoons vanilla extract
05 - 1 cup whole milk
06 - 1 cup all-purpose flour
07 - 1/2 teaspoon salt

08 - Powdered sugar for dusting
09 - Fresh lemon juice
10 - Lemon curd
11 - Pure maple syrup
12 - Fresh berries
13 - Sliced fresh peaches
14 - Homemade whipped cream

# Instructions:

01 - Heat your oven to 400 degrees. Drop half a tablespoon of butter into each cup of a standard muffin pan. Slide the pan into the oven and let the butter melt completely, which takes just a few minutes.
02 - While the butter melts, toss the eggs, sugar, vanilla, milk, flour, and salt into a blender. Blend everything together until smooth and creamy. Give the sides a quick scrape to catch any flour hiding there, then blend once more to get a silky batter.
03 - Once the butter has melted, carefully take the hot pan out of the oven. Use a pastry brush to coat every inch of each muffin cup with the melted butter, making sure to go all the way up the sides so nothing sticks. Pour the batter evenly into each cup and pop the pan back in the oven.
04 - Let them bake for 16 to 20 minutes until the edges puff up beautifully and turn a lovely golden brown. Whatever you do, don't peek inside during the first 15 minutes or they'll collapse on you.
05 - Pull them out of the oven and give them a generous dusting of powdered sugar. Add your favorite toppings like maple syrup, a dollop of whipped cream, tangy lemon curd, or fresh berries, and serve while they're warm.

01 - These adorable little pancakes will puff up dramatically in the oven, creating crispy golden edges with a soft, custardy center.
02 - Resist the urge to open the oven door during baking or they'll deflate immediately. Use your oven light to check on them instead.
