01 -
Using a stand mixer or electric hand mixer, blend together the peanut butter and melted butter until they're smooth and well combined.
02 -
Fold in the Rice Krispies cereal and mix until everything is evenly distributed throughout the peanut butter mixture.
03 -
Mix in the confectioners' sugar. When the mixture gets too thick for the mixer to handle, switch to a rubber spatula and finish combining by hand.
04 -
Line a baking sheet with parchment paper. Using a cookie scoop, portion out the mixture onto the prepared sheet. Roll each portion between your palms to form smooth balls.
05 -
Place the baking sheet in the refrigerator and let the peanut butter balls chill for at least 30 minutes until they're firm to the touch.
06 -
Melt the chocolate in the microwave, stirring frequently until it's completely smooth. Dip each chilled peanut butter ball into the melted chocolate, coating it completely, then return it to the parchment-lined sheet.
07 -
Refrigerate the chocolate-coated balls until the chocolate is set and firm. Keep any leftovers in an airtight container in the fridge for up to several days, or freeze them for up to several weeks.
