In a mixing bowl, beat the softened cream cheese together with the chive and onion spread until smooth. Add the salt, pepper, and garlic powder, then fold in about 1 and 1/4 cups of the shredded sharp cheddar. Mix until everything is well combined.

Lay out a double layer of plastic wrap on your counter, making sure it's long enough to fully wrap around the cheese mixture. Sprinkle about 1/3 cup of the remaining shredded cheese in the center where you'll place the cheese ball.

Scoop the cheese mixture onto the plastic wrap over the cheese you just sprinkled. Use the rest of your shredded cheese to coat the top and sides completely. Wrap everything up in the plastic wrap and gently press to form a smooth ball shape.

Take thick rubber bands and wrap them around the cheese ball twice, creating sections that mimic a pumpkin's grooves. You'll want to space them evenly to get that classic pumpkin look.

Pop the cheese ball in the refrigerator and let it chill for at least 2 hours so it firms up nicely. Once chilled, carefully remove the rubber bands. Place the bell pepper stem on top as the pumpkin's stem and serve alongside your favorite crackers.
