Using an electric mixer, cream together the softened cream cheese and butter until perfectly smooth. Scrape down the bowl sides, then gradually mix in the powdered sugar and vanilla.

Slowly drizzle in the milk, one tablespoon at a time, beating until you reach a pourable but thick consistency. Pop it in the fridge to chill while you make the waffles.

In a big mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined. Set this aside for now.

In another bowl, whisk together buttermilk, cooled melted butter, eggs, vanilla, and red food coloring until everything is nicely blended and you get that gorgeous red color.

Pour the wet mixture into the dry ingredients and gently fold everything together until just combined. Don't worry about a few lumps - overmixing will make tough waffles.

Lightly grease your waffle iron if needed. Pour in about 1/2 cup of batter (or whatever your waffle maker needs) and cook for 3-5 minutes until they're golden and crispy on the outside.

If making multiple batches, keep finished waffles warm in a low oven. Give the chilled glaze a quick whisk, then drizzle generously over the warm waffles. Serve immediately and enjoy every bite!
