Red Velvet Breakfast Waffles (Print Version)

# Ingredients:

→ For the Creamy Glaze

01 - 4 oz cream cheese, room temperature
02 - 1/4 cup soft unsalted butter
03 - 1 1/2 cups confectioner's sugar
04 - 1 tsp pure vanilla extract
05 - 2-3 tbsp whole milk

→ For the Fluffy Waffles

06 - 2 cups plain flour
07 - 1/4 cup white sugar
08 - 2 tbsp unsweetened cocoa powder
09 - 1 tbsp baking powder
10 - 1 tsp baking soda
11 - 1/2 tsp fine salt
12 - 1 1/2 cups fresh buttermilk
13 - 1/2 cup melted butter, slightly cooled
14 - 2 large fresh eggs
15 - 1 tsp vanilla essence
16 - 1/4-1/2 tsp red gel food coloring

# Instructions:

01 - Heat up your waffle maker following the instructions that came with it.
02 - Using an electric mixer, cream together the softened cream cheese and butter until perfectly smooth. Scrape down the bowl sides, then gradually mix in the powdered sugar and vanilla.
03 - Slowly drizzle in the milk, one tablespoon at a time, beating until you reach a pourable but thick consistency. Pop it in the fridge to chill while you make the waffles.
04 - In a big mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined. Set this aside for now.
05 - In another bowl, whisk together buttermilk, cooled melted butter, eggs, vanilla, and red food coloring until everything is nicely blended and you get that gorgeous red color.
06 - Pour the wet mixture into the dry ingredients and gently fold everything together until just combined. Don't worry about a few lumps - overmixing will make tough waffles.
07 - Lightly grease your waffle iron if needed. Pour in about 1/2 cup of batter (or whatever your waffle maker needs) and cook for 3-5 minutes until they're golden and crispy on the outside.
08 - If making multiple batches, keep finished waffles warm in a low oven. Give the chilled glaze a quick whisk, then drizzle generously over the warm waffles. Serve immediately and enjoy every bite!

# Notes:

01 - No buttermilk on hand? Simply add 1 tablespoon of fresh lemon juice or white vinegar to regular milk and let it sit for 5 minutes - instant buttermilk!
02 - Want to make these extra special? Try serving with chocolate whipped cream or a scoop of creamy vanilla ice cream for the ultimate indulgent breakfast treat.
