Put the cold cream cheese in a large mixing bowl along with 2 tablespoons of the softened butter. Using an electric hand mixer, beat them together, then gradually add the remaining butter 2 tablespoons at a time. Make sure to mix well after each addition until everything becomes smooth and creamy.

Add the strawberry preserves, your choice of extract, salt, and food coloring if you're using it. Beat everything together until well blended.

Stir in the powdered sugar and mix just until everything comes together. Be careful not to overmix at this stage.

You can use the frosting right away, or if it seems too soft for piping, pop it in the fridge for 10 to 20 minutes to firm up a bit.
