Turkish Sumac Onion Salad (Print Version)

# Ingredients:

01 - 1 big red onion
02 - A generous handful of fresh flat-leaf parsley

→ For the Marinade

03 - 2 teaspoons sumac powder
04 - 1 tablespoon freshly squeezed lemon juice
05 - 1 tablespoon good quality olive oil
06 - A nice pinch of sea salt

# Instructions:

01 - Using a sharp knife or mandoline slicer, cut your red onion into very thin slices. If you want a milder flavor, let the sliced onions sit in a bowl of cold water for about 10 minutes, then drain them well.
02 - Take your fresh parsley and give it a rough chop - you want nice rustic pieces, not too fine.
03 - Place the onion slices in a mixing bowl and add the sumac, lemon juice, olive oil, salt, and chopped parsley. Mix everything together really well, making sure every onion slice gets coated with that beautiful purple sumac seasoning.
04 - Give your onion salad about 5 minutes to sit and marinate so all those tangy, zesty flavors can come together. Then it's ready to serve alongside grilled meats, in wraps, or with any Middle Eastern meal!
