Cheesy Baked Sweet Onions (Print Version)

# Ingredients:

01 - Nonstick cooking spray
02 - 4 large Vidalia or sweet onions (roughly 3 pounds), sliced into 1/4-inch rounds
03 - 1 1/2 teaspoons kosher salt
04 - 1 teaspoon dry mustard powder
05 - 1 teaspoon garlic powder
06 - 1 teaspoon smoked paprika
07 - 1/4 teaspoon cayenne pepper (leave out if you prefer mild)
08 - 1 cup shredded mild cheddar cheese (about 4 ounces)
09 - 1 cup shredded smoked Gouda cheese (about 4 ounces)
10 - 1/3 cup grated Parmesan cheese
11 - 4 tablespoons unsalted butter, cut into small pieces
12 - 2 tablespoons chopped fresh parsley for topping (optional)

# Instructions:

01 - Start by heating your oven to 350°F. Give a 9x13-inch baking dish a light spray with cooking spray. Pull apart the onion slices into individual rings and toss them in a big bowl with the salt, mustard powder, garlic powder, smoked paprika, and cayenne pepper until everything's well coated.
02 - Spread half of your seasoned onion rings across the bottom of the baking dish in an even layer. Scatter half of the cheddar and half of the smoked Gouda over the onions.
03 - Layer the rest of the onions on top, then sprinkle with the remaining cheddar and Gouda. Finish by sprinkling the Parmesan evenly over everything and dotting the top with the butter pieces.
04 - Cover your dish tightly with aluminum foil and slide it into the oven. Bake for about 45 minutes until the onions are tender and you see bubbling around the edges. Pull off the foil and bake for another 30 minutes until the cheese on top turns golden and gets those lovely browned spots. Sprinkle with fresh parsley before serving if you'd like.
